Girly Gourmet: Prejesnas

Our girly friend, Janis, sent us this yummy recipe: Warning: Don’t try to pronounce it, just make it. Trust me, you’ll love it!
This is a baking recipe…sort of quiche like but not all eggy and bland. It is a perfect brunch dish or vegetarian dinner.
Prejesnas (Pre-Hes-Nas) I have no idea where the name comes from I have Googled it to no avail. Recipe was handed down to me from my Aunt, she got it from a college roommate.
So here goes:
1 cup flour
1/2 tsp. salt
1 tsp. baking powder
1/2 lb cheddar cheese, grated
1 c. milk
1/2 medium onion, diced fine
2 eggs, slightly beaten
1/2 bunch fresh spinach, or 1 pkg frozen (thawed)
1/2 c. melted margarine
Mix dry ingredients, add beaten eggs, milk, melted margarine, and stir. (I like using a wooden spoon to get the lumps out.)
Add cheese, chopped spinach and onion. Pour into greased 12X7 pan. Bake @ 375 degrees for 35 minutes.
FYI: I tend to feed a lot of people so I double this entire recipe (using a whole bag of packaged fresh Spinach), pour into a 9X13 casserole dish and cook for about 50 minutes, until nice & golden on the top.
Occasionally I get extra creative and and chopped bacon bits if it’s for brunch, or fresh sliced mushrooms…you get the idea
As a bonus it also photographs well
